These Salmon Burgers Are Mind-Blowingly Good!

When I was brushing up on my Spanish last year, Duolingo led me to believe that I would be ordering hamburguesas de pescado everywhere in Spain (this food item appeared in almost every lesson, every day). But in my two weeks in Spain, I was presented with zero opportunities to order a fish hamburger.

What’s funny is that I probably would have ordered it if I had ever seen it on a menu! So today, it IS on my menu, and I hope you’ll add it to yours, too.

I set out to make a flavorful and juicy salmon burger, thinking I would need many rounds of recipe testing to get it just right. But I actually nailed it on the very first try.

As I was eating the perfectly browned burger with the only simple toppings it needed (crunchy lettuce and creamy homemade tartar sauce), I was making audible “oh my god this is so good” gasps and noises. There was literally not one single thing about it that could be improved. My husband and six-year-old daughter agreed.

My Go-To Pork Noodle Soup

On the coldest nights here in the Midwest, only a bowl of hot steaming broth and noodles will warm me up. My family goes out for a lot of ramen, udon and pho, but we also make versions of these Asian dishes at home quite often.

This soup is adapted from an old Alison Roman for Bon Appetit recipe, adapted to be easier for the home chef (because I don’t know about you, but I don’t want to chop cumin seeds, and I don’t keep Sichuan peppercorns at home).

Even with some shortcuts, this soup doesn’t TASTE like a shortcut. The fragrant, umami-rich broth gives you the perfect balance of garlic, ginger, soy sauce, fish sauce, ground cumin (no chopping seeds!) and black pepper in each bite.

Make this soup as spicy (or not spicy) as you’d like by adding an appropriate amount of red pepper flakes. And please use what you have on hand when you’re choosing the meat, noodles and greens. I’ll talk about this more below!

This Homemade Tartar Sauce Recipe Is Great On . . . Everything!

Since I was a little kid, I’ve LOVED tartar sauce.

Obviously, the mayonnaise part is built into my Midwestern DNA. But add the pickles and the herbs and it just becomes such an A++ condiment. Of course, it’s perfect with fried fish, and 99% of my unabashed love for the Filet-O-Fish (guilty pleasure, please don’t judge) is simply the tartar sauce.

I also love tartar sauce as a dip for French fries, roasted potatoes, and heck, pretty much every other kind of roasted vegetable, too. It’s obviously amazing with all kinds of seafood dishes. Give it to me with grilled chicken, honestly. Tartar sauce all day, every day.

However, I find most jarred and bottled tartar sauces to be very underwhelming. They often have an “off” flavor to me that I can’t quite place. It’s probably just the fact that they’re made with all sorts of fillers and additives and frankly, just not good.

So, fellow tartar sauce lovers: let’s explore making some homemade tartar sauce, using the same recipe I was taught in culinary school (just scaled down for the home kitchen).

This Stuffed Cabbage Soup Recipe Has All Of The Flavor, None Of The Hassle

My husband grew up eating stuffed cabbage rolls, thanks to his Polish ancestry. I’ve made that dish a few times over the years. I’ve loved the flavors, but haven’t loved the time-consuming process of assembling the rolls.

Between making the filling, boiling the cabbage leaves, then wrapping, THEN baking . . . it’s a lot. In the end, each time, I felt that the effort put into the process simply wasn’t quite worth it.

My husband always jokes that I’m an Italian Grandma in spirit, and well, he’s right. I love making big Sunday dinners and showing my love for people through food.

So trust me, I’ve perfected the Grandma Pizza. After many Sundays spent testing this recipe, I’m confident that this one has the best ratio of crispy crust edges to bready centers, plenty of cheese, just the right amount of tangy sauce, and some finishing touches that take it to the next level.

What’s A Grandma Pizza?

Grandma Pizza is a unique style that comes from home kitchens in Italian-American communities, especially on Long Island, New York. It’s named after the way grandmothers traditionally make rustic pizza at home without a dedicated pizza oven.

You don’t need even a pizza stone or pizza pan. You bake it on a regular old sheet pan, generously coated in olive oil for a thin but sturdy crust with a crispy bottom and edges. Low stress but high flavor!

A solid layer of cheese is layered over the crust, and then a small amount of pizza sauce is spread over the cheese (rather than under), a classic grandma pizza method that keeps the crust crisp and prevents it from getting soggy.

Grandma pizza is known for its minimalist approach, so beyond the cheese and sauce, toppings are generally kept to a minimum on this pie.
