This Carrot Cake Smoothie has all the flavor of a beloved dessert, in a much healthier package! Carrots, yogurt, walnuts, honey and sweet spices come together to make a creamy and portable breakfast or snack.

Ingredients

  • 2 medium carrots peeled and roughly chopped
  • 1 container vanilla Greek yogurt (about 1/2 cup) 5.3 ounces
  • ½ cup unsweetened vanilla almond milk
  • ¼ cup unsweetened flaked or shredded coconut
  • ¼ cup walnuts
  • 1 tablespoon honey
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • Pinch ground nutmeg
  • 1 cup ice

Instructions

  • Add all ingredients to blender in order given.
  • Blend until smooth.
